Christmas dinner wouldn’t be complete without a beautifully cooked turkey at the centre of the table. At Windsor Meats, we believe that a great turkey starts with quality meat and finishes with simple, confident cooking. Whether it’s your first time hosting or you’re a seasoned pro, this guide will help you serve a turkey that’s juicy, flavourful, and guaranteed to impress.
1. Start With the Right Turkey
The foundation of a perfect Christmas turkey is quality, and you know that a Windsor Meats turkey is exactly that, with better flavour and texture than mass-produced alternatives.
2. Prepare the Bird Properly
Bring It to Room Temperature
Remove your turkey from the fridge about one hour before cooking. This helps it cook more evenly.
Season Generously
Keep it classic and let the turkey shine:
Rub softened butter (or olive oil) all over the skin
Season well with salt and freshly ground black pepper
Add aromatics like lemon halves, garlic, onion, thyme, sage, or rosemary inside the cavity
For extra flavour, gently loosen the skin over the breast and spread some butter directly onto the meat.
3. To Stuff or Not to Stuff?
While traditional stuffing is delicious, cooking it separately is often safer and helps the turkey cook more evenly. If you do stuff the bird, make sure the stuffing is hot before it goes in and that the turkey is fully cooked through.
4. Cooking Times and Temperatures
Cook your turkey at 400°F for 10 minutes uncovered at the start of your cooking time to get a beautiful golden brown colour, then reduce the temperature to 325°F and cover with tinfoil.
Bake for 15-20 minutes per pound. For a stuffed turkey, add an extra 5 minutes per pound.
5. How to Know When It's Done
When done, a meat thermometer inserted into the thickest part of the thigh should read 165°F. If you don't have a thermometer, pierce the thigh. The juices should run clear, not pink.
6. Resting: The Secret to Juicy Turkey
Once cooked, remove the turkey from the oven, cover loosely with foil, and rest for at least 30 minutes. This allows the juices to redistribute, making the meat tender and easy to carve.
